Then it isn't that easy. It needs to be a full moon night for her powers to allow bloodbending.
That said, what does this guy do? Manipulate his blood into weapons? Maybe it isn't that hopeless for Katara. I mean, even without bloodbeding, she's been shown doing insane stuff and defeat countless powerful people (amongst them Azula).
I wouldn't count Katara simply as a bloodbender.
