Hellsing Ultimate Ova.
Best thing ever
It's also the oldest anime i watch. Not counting DB/Z/GT, but those i already watched...more than once XD

I cannot believe i forgot to had Neon Genesis Evangelion. It had the most complex story i ever saw. The thing is a masterpiece. Still not better than Hellsing though.

3-Hokuto no Ken (the ancestral of all fighting animes and one of the best of its kind) or Claymore
4-Death Note

I finished FLCL and I loved it, it takes inuyasha's old place of 5, even if it is only six episodes long.

the honorable mentions I forgot:
bobobo-bo-bobobo (how the hell did I forget bobobo?), zatch bell, and though I was very young when i watched it (like 6) and I can only remember a few scenes, I absolutely LOVED the tenchi series when i was a little girl. I gotta figure out what series I used to watch and go rediscover it sometime

By your avatar i would say that your favourite is TTGL, right??? indeed an awesome anime... it has a super speed pace that totally surprised me!!! the characters are damn awesome.. kamina is the the TTGL soul!! good fights, good story... its on my top 10!! (although my list only shows the top 5...lool)
